Indianized Spaghetti -------------------- Materials: Thin Spaghetti or Angel Hair or capellini Pasta: 1 lb packet serves 5 people Hot Salsa Vegetables of choice (not sticky or bitter) - like cauliflower, potatoes, capsicum, peas, corn, carrots, zucchini,etc. Steps: 1. Boil Water and add spaghetti (break them into 3-4 pieces since they are long) Boil spaghetti till cooked and drain the water. 2. Parallel to boiling the spaghetti, boil the vegetables also till tender. Drain the water. 3. Heat oil and spices (red chilies, mustard, jeera, turmeric, green chilies) Later add the boiled vegetables and salt. Fry and keep stirring them for 3-4 mins. 4. Add Hot Salsa as required (depending on the total quantity of the vegetables and spaghetti such that it binds the spaghetti; should not be as much as the sauce served in Italian restaurants). Mix well. 5. Finally add the spaghetti and mix well. Keep stirring and turn off the stove in about 3 mins. Ready to serve now. If Salsa seems to be less then it can be added while eating. (Vegetables should be atleast 1/2 the quantity of spaghetti. If one likes vegetables the more the better; closer to 1:1 ratio) - Sarada Susarla
