carrot: peel and grate mix in curd. add salt and turmeric. oil fry: curry leaves, jeera (more), mustard, red chilis, green chilis add to above. Tomato: Mix salt & turmeric into curd. simmer tomato in oil. after cools, add to curd oil fry: same as above. add coriander for taste. Bottle gourd (AnapakAya or sorakAya): Mix salt & turmeric into curd. Simmer bottle gourd (AnapakAya) with a little salt & water. after cools, squeeze out the water and add to curd oil fry: same as above. For added taste, roast half teaspoon of methi seeds & grind them mix this methi powder into above.
